Adventure at your leisure: Fall mushroom foraging
By Shae Callewaert
We live in a society where
food is in abundance, and with
this abundance it is easy to distance ourselves from where our
food comes from. Food from
other continents magically appear on our local shelves, the
deli seemingly never runs out
of fried chicken and produce
seasonality is merely a suggestion. But this was not always
the case. For most of human
history we were hunters and
foragers, only consuming what
the local environment could
provide. It is hard to explain
the intrinsic reward that comes
with acquiring your own food.
Those who participate in hunting and foraging will tell you
that it’s a feeling of self-sufficiency and a connection to an
ancestral knowledge. I would
argue that most of us can still
experience this rewarding act,
and one of the most accessible
ways to do so is foraging for
mushrooms.
The fall season brings milder
temperatures and moisture
conditions that fungi thrive in.
Especially in Central Oregon,
White Chanterelles foraged in the Sunriver area, prized for their exceptional 昀氀avor and aroma.
many edible species present
themselves. At different elevations you can expect to find
edible fungi such as chanterelles, matsutake, porcini,
scaly hedgehog, saffron milk
caps, various coral mushroom
